Green Beans
1 large onion, diced 1 lb. green beans, end snapped 1/2 cup olive oil 4-5 garlic cloves 2 tomatoes, peeled and diced (canned ok) 1 cup chicken stock Salt & pepper
Sauté onions until golden; add garlic, beans and tomatoes. Sauté 2 more minutes, add stock and let simmer gently until beans are tender but not over cooked, to desired texture.
