Pizza dough
INGREDIENTS: 2 & ½ cup flour 1 tsp. Instant yeast - or two ¼ packs yeast 2 Tbsp. sugar 1 cup water 1 Tbsp. salt 1 Tbsp. olive oil
In a mixer with a dough hook, combine four cups of the flour, salt and yeast while machine is running. Add oil then water, let mix on slow until incorporated, then mix five minutes on the 3 or 4 speed. If dough is very sticky, add some more flour as needed. Let rest 45 minutes in a lightly oiled bowl covered in a warm place.
Basic tomato sauce
1 large onion, diced 5 garlic cloves 2 cans whole tomato, crushed ½ cup +4 Tbsp. olive oil ½ cup chopped basil Salt & pepper
In a saucepan, saute onions in 4 Tbsp. olive oil, and garlic, sautee 2 more minutes. Add tomatoes, crushing them with your hand. Salt & pepper, simmer 30 - 35 minutes on low heat. Using a handheld blender, smooth sauce while adding basil and olive oil. Let cool.
