Rice Pilaf with Bottom Mushrooms Serves 6 people
1/4 cup olive oil 1 large onion, diced 4-5 garlic cloves, minced 2 cups mushrooms, sliced 1 cup medium or long grain rice 1-3/4 cup chicken stock 1/4 cup parsley, chopped Salt & pepper
Sauté onions in olive oil until golden, add rice, sauté until solid white. Add garlic and mushrooms, sauté 2 minutes longer. Add stock, bring back to a boil, stir and simmer covered for 20 minutes. Turn off heat, but do not open pot for 5 - 10 minutes. Add parsley and fluff with a fork.
