Pate a'Choux
1 tsp. salt 1 1/4 cup all purpose flour 1 cup water 1/2 cup butter 3 Tbsp. sugar 6 eggs oil from frying
Bring the salt water and butter to a boil, take off the heat. Stir in the flour with a wooden spoon. Return to heat stirring for 1 minute. Take off the heat, stir in cheese, then eggs, one at a time. Fry dollops of batter in 325-degree oil until golden brown.
