Shrimp Roulade
serves 6 - 8 people
INGREDIENTS: 6 large shrimp 1/2 lbs. crab (cleaned and picked) 1 Tbs. garlic 1 ball fresh mozzarella (slice into strips) 2 Tbs. cilantro (chopped) 1 roasted red pepper (julianne) 1 roasted green pepper (julianne) Salt and pepper to taste
Butterfly shrimp, dredge in flour, place between to pieces of plastic wrap and then pound shrimp flat. Lay two shrimp side by side with the tails opposing. Layer all ingredients in center and roll in flour, egg and breadcrumbs. Plan fry to golden brown. Slice and serve.
